Table Stout
Parti-gyle is a style that goes back for centuries. The idea is that you make a second beer with the remaining fermentable sugars and substance of the first beer. In our case we are in the process of creating a new imperial stout but also utilized our Belgian house yeast and a small amount of our Belgian wit that was remaining in the fermentor. Everything kindof lined up perfectly for this to work together to create a complex, but low ABV dark beer. Smooth, rich, creamy notes of chocolate, roasted malt, coffee, subtle fruitiness, black pepper. Refreshing and very satisfying.

Dr. Spreuss IPA(Seasonal)
Southern Philosophy’s Dr. Spreuss IPA, a Sprucetip HAZY IPA inspired by the season and historical colonial spruce beers that Benjamin Franklin and Thomas Jefferson would have produced and enjoyed. The Spruce was sourced from an FDA approved supplier that harvests at high elevation in Colorado. In addition to the Spruce tips the beer is hopped with Citra, Southern Cross, Columbus and Azacca hops.
